For a 15 pump above green (raw) weight dissolve 550g Prem Bacon & HamN0020 cure in 10L water. After dissolving cure add salt 800g (to yourpreference), sugar can be added if desired, dissolve before pumping.Pump meat to 15 above raw weight. Premix contains Sodium Nitrite 2.14 .Please note there are no permissions in the Food Standards Code to addNitrite Cures to Fish Products.
